Per the documentation: Touch Records: By default, only records where data is changing will be updated. Touch Records allows you to update the last modified date without changing any other data in a record.
The question:
If use the touch records will that trigger any automated processes like flow,...?

@Elvin_W Great question. This is actually a common use case and a big motivation behind this feature. Essentially touch records can allow you to "trick" Salesforce into thinking a change has been made on the record so that any automated processes or flows you have dependent on record modification will run.
