I have two IPs (one 1 year old and another one fresh new) on the same Marketing Cloud Business Unit and want to see the Everest engagement metrics of each one, so I can analyse if the new one is performing better or worse then the new one.

While this isn't something that can be done with the standard Everest engagement metrics, this is absolutely something that you could do by implementing a Custom Property into your Everest pixel. Custom properites allow you to track metrics outside of what the standard pixel can provide.
